Like Water for Chocolate

Jacques invited Gabriella Gershenson, food editor of Time Out New York magazine, to join him for an afternoon’s fishing off the shores of Manhattan. After a paella lunch prepared dockside, it was off to catch dinner. Gabriella learned how to reel in her catch and the “sweet spot” in which to find them. On a quest for the perfect chocolate chip cookie, David Leite set out on a weeks long investigation, tasting, testing and retesting. Along the way he uncovered some of the keys to a great cookie - letting the dough rest, the size of the cookie, the quality of the chocolate and a sprinkle of salt. The result of David’s research, “the archetypal cookie recipe” was adapted from Jacques’ classic recipe, and was published in The New York Times. Why not try and make a batch yourself?
